AP women prepare sweets for Sankran
Sakinaalu or little hoopla rings are a favourite among snack lovers in Andhra Pradesh.

Sankranti, the harvest festival of south India is around the corner and women are busy preparing mouth-watering dishes.

Sweets with jaggery procured from freshly harvested sugarcane and snacks like murukus are a hit during the colourful festival.

Sakinaalu or little hoopla rings are a favourite among snack lovers in Andhra Pradesh.

Come Sankranti, Pramila, a housewife, gets busy making Sakinaalu. It is rice powder, sesame seeds and salt mixed into a paste.

The women skillfully twist their fingers to make rings of the paste and spread it on one of their old saris. Once it is dry they are ready to be deep fried.

We are tense till we prepare it. Because we can't taste what it is like before we offer to God," said Pramila.

Sakinaalu is prepared with new rice that is harvested in the Sankranti season. The most important task is to make the rings.

The taste of Sankranti is Andhra's Ariselu which residents say is made of rice, and jaggery procured from freshly harvested sugarcane.

Ariselu's are always flat perhaps because they are sandwiched between wooden surfaces to remove excess oil.

"People wait for Sankranti so that they can eat Ariselu. We sell so many everyday," Subba Rao, a businessman.

The king of all south Indian snacks the crispy, crunchy murukus are also prepared for the festival.

In all these deep fried snacks a pinch of asafoetida is added to make digestion easy.
